Title: Enzymatic Production of Prebiotic Fructooligosaccharides by microorganisms
Abstract:
Functional foods have favorable impact on human health besides nutritional consequences. From last three decades these foods have been directed more towards food additives that may execute beneficial effect on human gut microbiota mainly by probiotics and prebiotics. Fructooligosaccharides (FOS) a prebiotic food product has great demand due to its various functionalities. FOS is being successfully used as an artificial sweetener and is regarded as dietary fibres with low caloric value that progressed growth of bifidobacteria in human colon. In addition, it has extensive functionalities like noncariogenicity, nondigestibility, stimulate absorption of calcium and magnesium and reduce the level of total cholesterol, phospholipids and triglycerides in serum. The term fructooligosaccharides is preferably being used for fructose oligomers which contain one D-glucose unit and 2-4 D-fructose units bound together by β (2→1) glycosidic linkages. FOS can be produced by the action of enzymes possessing transfructosylating activity either fructosyltransferase (E.C 2.4.1.9) or β-fructofuranosidase (E.C. 3.2.1.26) derived from many plants and microorganisms. However its main commercial production comes due to usage of microbial enzymes by reacting with sucrose or inulin as a substrate. For immense FOS production, development of more enzymes with high activity and stability is required and has attracted interest by biotechnologist and microbiologist across the world.
Biography:
Dr. Mohd Anis Ganaie is an
Assistant Professor and Head Department of Zoology in Government degree college
Handwara, an affiliated college with University of Kashmir, Srinagar J&K,
India. He has completed his Post doctorate under “Science Without Border”
programme (Open merit Post doctorate fellowship) awarded by National Council
for Scientific and Technological Development Ministry of Science, Technology
and Innovation (CNPq/MCTI), Brazil. He has done his Bachelor’s degree in
University of Kashmir and Masters in Zoology, specialization in “Cell and
Molecular Biology” in Bundelkhand University campus. He obtained his Ph.D
degree from Dr. Harisingh
Gour Central University Sagar, MP, India and has been rewarded two Fellowships
(UGC BSR meritorious Fellowship) for whole Ph.D period and MP Young Scientist
Fellowship, for better performance in research work. He has published 17
research papers and 2 review articles in international prominent journals like Carbohydrate Polymers, Process
Biochemistry, International Biodeterioration and
Biodegradable, Journal of Taiwan Institute of Chemical Engineering, Journal
of molecular Catalysis, B: Enzymatic, Journal of
Applied Biochemistry and Biotechnology, Arabian
Journal of Chemistry, Antonie van Leeuwenhoek Journal of
Microbiology etc. He has
delivered lectures on various national and international conferences and served
as a reviewer in wide range of international journals. Currently he is
interested in progression of human health by various prebiotic oligosaccharides
which influences gut microbiome.
